Cajun Fried Fish
Ingredients
- 4 fillets catfish, tilapia, etc.
- 1 egg
- 1 cups cornmeal
- 1 tbsp cajun seasoning
- 1 tsp ground black pepper
- corn oil
Instructions
Cut fish into 3″ x ½” chunks. Beat eggs in one bowl. Mix cornmeal and spices in a second bowl.
Fill iron skillet with enough corn oil to cover at least halfway up your thickest fish chunk, and turn heat on medium.
Coat chunks with egg, then cornmeal mixture, then space them out a bit in the pan, and flip after a while.
When chunks are deep golden brown and flaky in the middle, drain on a cooling rack over a cookie sheet.
