Mushroom Paneer Rogan Josh
Ingredients
- cooked brown rice
- 1 batch of paneer
- 2-3 portobella mushrooms, cubed
- any veggies, e.g. bell pepper, zucchini, frozen green peas, partially boiled sweet potato cubes, etc.
- salt, pepper, olive oil or butter
- 1 jar Maya Kaimal kashmiri curry (rogan josh)
Instructions
Add mushrooms to a pan on medium-low heat. Let them sweat it out, stirring occasionally, until lots of their moisture has evaporated.
Add any non-frozen veggies to the pan. Add oil or butter and season to taste. Stir for a minute or so.
Add the sauce and any frozen veggies to the pan. Simmer, stirring occasionally for about 5-10 minutes, or until sauce is warm and veggies are desired tenderness.
Serve over rice.
