Herbed Chicken Crock Pot

Ingredients
- 1½ lb chicken thighs or drumsticks
- ½ cup chicken broth
- ½ tbsp olive oil
- 1 tbsp cornstarch
- 1 sweet potato, diced
- 1 bell pepper, diced
- ½ medium onion, diced
- 1 medium carrot, diced
- 1 to 2 handfuls cherry tomatoes
- ½ tsp fresh thyme
- ¼ tsp fresh basil
- ¼ tsp salt
- ¼ tsp pepper
Instructions
If desired, brown chicken on all sides in hot oil over medium-high heat, drain, and set aside.
In a slow cooker, combine sweet potato, onion, and carrot, broth, and spices. Add chicken. Cover and cook for 8 hours on low, or 4 hours on high. In the last hour or so, toss in the bell pepper and tomatoes.
Serve over wild rice.
