Mediterranean Lamb Bowl
Adapted from Fox and Briar Lamb / Rice, and Food & Wine Hummus.
Lima Bean Hummus Ingredients
- 16-ounce package lima beans, thawed
- ¼ cup or more olive oil
- 2 cloves garlic
- 1 medium lemon, zested
- 1 tbsp lemon juice
- 1 tsp salt
- pepper to taste
Turmeric Rice Ingredients
- 1 tbsp butter
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup brown rice, rinsed
- 1½ cups chicken broth
- 1 dried bay leaf
- salt and pepper to taste
- 1½ tsp turmeric
Spiced Lamb Ingredients
- 1 lb ground lamb
- 1 tbsp olive oil
- ¼ cup finely diced onion
- 4 cloves garlic, minced
- 1 tsp paprika
- 1 tsp allspice
- ½ tsp red pepper flakes
- ¼ tsp ground ginger
- salt and pepper to taste
- ¼ cup chopped fresh mint
Other Ingredients
- ½ to 1 package cherry tomatoes, blistered
- ½ to 1 raw zucchini, cut into thin discs, then quartered
- feta cheese
Lima Bean Hummus Instructions
Boil the lima beans for about 20 minutes to soften them. Drain and cool.
In a blender, add olive oil, garlic, lemon zest, lemon juice, salt and pepper. Blend till ingredients are combined.
Add the lima beans and slowly blend until smooth. If thick, stop blender, stir, maybe add more olive oil, and then blend again. Repeat until the hummus is smooth.
Turmeric Rice Instructions
In a medium saucepan over medium heat, add olive oil, butter, and garlic. Sauté for a minute or two.
Add rice and turmeric. Stir until combined. Add chicken broth and bay leaf, cover pan. Increase heat and bring to a boil.
Reduce heat, allow to simmer 15-20 minutes, or until liquid is absorbed. Remove from heat and allow to sit for 5 minutes. Remove bay leaf, fluff with a fork.
Spiced Ground Lamb Instructions
Heat olive oil in a large pan over medium heat. Add onions and garlic, and sauté for 5 minutes, until starting to soften.
Add ground lamb, and brown until cooked through.
Add paprika, allspice, red pepper flakes, ginger, salt and pepper. Mix until fully combined, and cook for 1-2 minutes.
Remove from heat and stir in fresh herbs.
Assembly Instructions
In a bowl, add turmeric rice, spiced ground lamb, lima bean hummus, zucchini, blistered tomatoes, and top with feta cheese.
