Okra Masala
Ingredients
- cooked brown rice
- olive oil
- 1 lb okra
- 2-3 carrots
- 1 small sweet potato
- salt, pepper, coriander
- 1 jar Maya Kaimal tikka masala
Instructions
Cut veggies into ½” pieces. Add oil and okra to a pan on medium-high heat. Stir frequently and adding more oil if needed, until slime evaporates, about 10 minutes maybe?
Meanwhile, boil the sweet potato in a small, covered pot for 5-8 minutes, until just partially tender, then drain.
Add carrots and sweet potato to the okra pan. Add more oil, and salt / pepper / coriander to taste. Stir for a minute or so.
Turn down the heat to medium-low, and add the masala sauce to the pan. Simmer, stirring occasionally for about 5-10 minutes, or until sauce is warm and sweet potato is tender.
Serve over rice.
